My husband is Armenian so we LOVE mediterranean food. Tabooleh was a salad/side dish that I grew up eating even before the vegetarian culinary trend became so popular. We have a huge patch of mint growing in our garden each summer so making Tabooleh during the summer months is a regular request from my family. The whole grain goodness of bulgur wheat combined with mint, parsley, tomatoes and other veggies with a lemon vinaigrette dressing is healthy dinner salad or side dish to serve at any summer BBQ. Car seats have changed so much over the years but they remain the most important safety device made for babies and children. The straps are an integral part of the safety each seat provides and it is very important that the straps are tight enough to function properly. The problem with that concept is that the webbing can potentially rub on a child’s neck and shoulders especially in the summer when kids are wearing short sleeved or scoop necked shirts or onesies. The music of a parade stirs the freedom to dance and the little body starts to rhythmically move and sway.

Zucchini Bread-healthy style
This summer, I planted a large garden filled with all of our favorite vegetables. The zucchini plants have gone crazy and are producing daily a crop of delicious and nutritious zucchini. I have baked, stir-fried, barbequed and added them into omelets, pizza and frittatas. So, this is not your typical red-white-and blue recipe to celebrate Independence day but it is a fun way to incorporate a healthy vegetable into a delicious breakfast or snack treat to enjoy. We will pack up some zucchini bread for our walk to the Fourth of July Parade tomorrow. The following is a conventional recipe for zucchini bread with healthy adaptations and the second recipe has a surprise chocolate spin to it.
