Apricot Bran Honey Muffins

Need a breakfast idea that is packed with healthy ingredients, incredibly delicious and a great way to send your kids off with a nutritious start that first day of school? I reorganized a few of my favorite ingredients into this recipe and I know you will love these muffins.

Ingredients
1 ½ cups chopped dried apricots, about 7 oz (I used sulfur free organic)
2 Tablespoons butter (can use dairy free margarine)
3 Tablespoons coconut oil
½ cup apricot nectar
2 Tablespoons honey
¾ cup oat bran
¾ cup whole wheat flour
1 teaspoon baking soda
½ teaspoon salt
¼ cup packed brown sugar
1 teaspoon vanilla
1 (8 oz) carton plain greek yogurt (can use soy or coconut yogurt to keep it dairy free)
1 egg
1 egg white

Preheat oven to 400 degrees.
Lightly grease a 12 count muffin tin.
Combine first 5 ingredients in a small saucepan and place on high heat until it comes to a boil. Turn down to low and let simmer for 3 minutes until apricots are plump and mixture is thick. Allow to cool.

Mix flour, oat bran, salt and soda in a medium bowl.
Wisk brown sugar, yogurt, vanilla, egg and egg white together in a small bowl and add to flour mixture in medium bowl.
Stir together until just moistened.
Fold in apricot mixture and quickly spoon into greased muffin tin.
Bake for 15 minutes at 400 degrees. Watch carefully so tops do not brown too much.
Makes 12 muffins.
Serve warm or room temperature.
Store in straight container.

High Protein Apple Muffins with a SURPRISE

So before I give you a new family favorite muffin recipe…….I have a surprise……..Since Poppa Rick has been thinking about some new ideas for how he is going to ease into retirement…he came up with one job that he DEFINITELY wants to pursue!!!! Now that you are privy to the surprise…here is a fun recipe to pack a protein powerful punch early in the day. Our adult kids and grandkids LOVE muffins so we are always looking for ways to pack our homemade muffins with more protein, more fiber and less processed sugar. In this recipe we tried using more natural sugar and a high protein flour mixture to make a delicious and more nutritious apple muffin. Kodiak Cakes mix is made with 100% whole grain wheat flour and 100% whole grain oat flour and has a protein blend added that boasts 14 grams of protein in a single serving of pancakes, waffles or muffins.

Each muffin has about 135 calories and 6 grams of protein. The only thing that would make these muffins better is if you sprinkled some homemade granola on top before baking.

You can use another brand of high protein pancake or waffle mix if you prefer. You can also substitute (homemade) apple butter for the unsweetened apple sauce and then just skip the maple syrup, cinnamon, ginger, cloves and nutmeg. …

The Perfect Mother’s Day Breakfast-Helping your Family Establish Wonderful Traditions

Mother’s Day is one of the BEST days of the year! BUT, it can also be one of the most stressful days of the year for Moms caught in the middle…..balancing celebrating your own mom, your MIL (if you are so blessed to have a MIL), and being the focus of your own family’s celebration. Allowing your immediate family to creatively organize your celebration is vital to “growing up” strong and responsible children. Releasing control of the “meals” for a holiday celebration may be challenging to many moms. So here are some suggestions that might make it easier for you to let go, relax and give your family the opportunity to celebrate you!

Besides hinting that a new plant for your garden might be just the perfect gift…..Here are a few tricks I have tried that make for a fabulous Mother’s Day in the food department. Have many of your favorite foods on hand and already prepared so the “surprise” breakfast in bed can actually include many of YOUR favorite things. (No offense intended towards all those well-meaning husbands and children that prepare their favorite pancakes, waffles, etc. to serve to their moms). I personally love fresh fruit, granola and yogurt, or muffins, scones and coffee (Peet’s of course) or even oatmeal with lots of toppings as my favorite picks for breakfast. I do love a great veggie omelet so if you have a hubby or kids that are so inclined…let them take a stab at that. Of course make sure all your favorite veggies are in the vegetable drawer. Or you can whip up a batch of our family’s favorite Easy Egg Bake and have it all ready made in the refrigerator for the family to cut, heat and serve on your “breakfast in bed” tray.

Muffin Mania-Back to School Secrets

School is back in session and moms everywhere are adjusting to the early morning routine. Making lunches, serving a healthy breakfast, helping everyone get dressed for school and making sure all necessary items are in the backpack are just a few of the essential tasks that must be completed each morning. I remember a few secrets from school days that helped our family stay organized…

1. Lay out the childrens’ clothing the night before, including hair accessories, socks and shoes.

2. Organize the childrens’ backpacks the night before, making sure important papers, books and especially any permission slips or notes to be signed by a parent are completed. Get the sports/ dance/ music/art bags filled for after school activities.

3. Grab the brown bags or special lunch boxes the night before and fill with everything except the sandwich and place in the refrigerator. Then all you have to do in the morning is make the sandwiches.

4. Plan and prepare some healthy breakfast options so you are not rushed or stressed in the morning. Breakfast is a very important meal and a special time to connect and talk together and pray before everyone goes off to face their busy day.

I love to bake muffins and it is amazing how many delicious and nutritious foods you can add to a muffin. Muffins can be made ahead of time (they keep well for a few days in the refrigerator or for weeks in the freezer). Serve with fruit, yogurt or scrambled eggs for a super charged breakfast. They can also be wrapped and placed in their lunch boxes for a healthy snack.

Healthy Snacks for Kids – Part 2

Sophie has been eating SO much the last few weeks! She must be going through a growth spurt because it has been so much that I have been running out of ideas of what to give to her. So, I went to my best idea resource (Rachel!) who tapped in to her best team of resources (Mom Squad!) to help me out! They gave such great options that I wanted to share the list with you!

The Mom’s List of Favorite Healthy Snacks for Kids:

  • Yogurt Drops – place yogurt in ziplock bag, snip off the corner and drop onto wax paper on a tray. Place in freezer to make a fun chip-like self-feeding snack!
  • Peanut Butter or Butter on Healthy Bread
  • Goldfish or Annie’s Cheese Bunnies 
  • Pirates Booty
  • Pouches (with that fantastic anti leak top) or DIY pouches (disposable or reusable)  
  • Cheerios 
  • Oatmeal Squares 
  • Bars: Larabars, Granola Veggie Bars, Ella’s Kitchen Snack Bars, or Kind Bars (esp the fruit and green ones)
  •  Muffins with hidden fruits and veggies and mostly all no or low sugar (check Pinterest) or Mini Muffins with any muffin recipe
  • Baked Pea Snacks (Inner Peas at TJs or Harvest Snaps from Costco) -Very low salt and high fiber and protein for a snack
  • Steamed Veggies – store in snack bags for on-the-go
  • Chia Crunch

  • Champagne Grapes from TJs – really small and sweet
