Oat Bran Muffins “BEST little bit of everything”

Best “Bit of Everything” Oat Bran Muffins

Bran muffins are a power packed nutritious breakfast. This recipe was created after a friend introduced me to a delicious and moist oat bran muffin that she had bought in Monterey. She asked the bakery for the recipe but all she was able to obtain was a list of main ingredients. I fiddled around until I was able to create a muffin recipe that was comparable to the one from the bakery. It has been a hit with the girls and their husbands and the grandkids. IMG_5400

 
1 cup oat bran
1 cup wheat bran
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 TBS cinnamon
2 eggs
½ cup maple syrup
1 cup plain nonfat yogurt (can use half buttermilk half yogurt)
1 tsp vanilla
2 TBS coconut oil
1 cup grated apple (1 medium apple)
1 cup grated carrots (2 carrots)
12 prunes chopped fine
½ cup chopped dates
½ cup raisins

In a large bowl combine dry ingredients. In a small bowl mix eggs, maple syrup, yogurt, vanilla and oil. Add wet ingredients to dry and stir just until combined. Fold in apples, carrots and dried fruit. Spray muffin tins with nonstick spray and fill each one ¾ full. Bake 350 degrees for 20-25 minutes until firm to light touch. Makes 18-24 muffins.
