Avocado Zucchini Bread
A few weeks ago on a Saturday, my husband and I went to our local farmer’s market and we had a blast picking out the fruits and vegetables we needed for the upcoming week. He decided he needed a snack and although his go-to favorite snack from the farmer’s market is kettle-corn he took me up on a challenge to try a chocolate chip cookie made with avocado (instead of oil). You have to understand that there are only a few things in the entire world that my hubby will NOT eat and avocado is one of them. To his great surprise, he actually liked the cookie and was quite impressed!!!! So I came home excited and inspired to try some baking using avocado instead of oil. So here is my first try….Avocado Zucchini Bread.
Ingredients
1 ¾ cups flour (you can use an oat flour and almond flour combo for gluten free)
¼ cup flax seed ground
2 teaspoons cinnamon (I used fancy vietnamese cinnamon)
1 teaspoon nutmeg (I used fresh ground nutmeg)
½ teaspoon salt
2 teaspoons baking powder
½ teaspoon baking soda
¾ cup sugar or honey
2 teaspoons vanilla
2 eggs
½ cup mashed avocado (1 whole avocado)
1 ½ cups grated zucchini
Optional add-ins: ½-1 cup mini chocolate chips, ½-1 cup chopped walnuts

Combine first 7 ingredients in a large bowl and set aside. Grate the zucchini and let it weep on paper towels so that moisture wicks away. In a mixer, combine the avocado and sugar and beat until smooth. (You can mix by hand if you like) Add eggs one at a time and mix until blended. Add vanilla and mix. Pour avocado mixture and grated zucchini into large bowl with the flour mixture and stir gently until combined. Do not over mix. …
What IF this Valentine’s Day……….
I just wanted to take a moment and give a shout out to the “If Gathering” that took place this weekend in Austin, Texas. If you did not hear about it or have not had a chance to log in and listen to the amazing speakers, I highly recommend taking the time to listen to some of the archived videos. Go to www.ifgathering.com and you will be blessed.

What IF this Valentine’s Day you took the time to refocus on your relationships? Our culture sets this day aside to honor your “one true love”, which is awesome….but what if we took the time to honor the author of LOVE? What if we took the time to refocus on God? I believe that the closer you draw to God the better you can love, not only your “one true love” but you can learn how to truly love your neighbor, your friends, your enemies, strangers, the poor, the downtrodden. In Chapter 2 of the book of Ephesians, the apostle Paul talks about how we were once far away from God, but we have now been brought near to Him through the blood of Christ. Christ himself brings peace and hope to our lives. Christ, who is LOVE, is the perfect example of LOVE and His love is perfect.…
A “Commitment” Person
A commitment person is someone who says what they mean and means what they say…a promise keeper.
Two weeks ago, we had the privilege of attending a 60th birthday party for a dear friend (like a sister to me). I was so blessed by the focus of the party-celebrating the life of a truly amazing woman. The word used to describe her as we began a time of tribute was “BRILLIANT”. The dictionary definition of brilliant is having or showing great intelligence or talent , distinguished, illustrious, shining brightly, sparkling. She is the epitome of all those things but SO much more!!! She brightens up every room she enters. She shines her vibrant personality onto all who know her and when you are with her, you feel like the most important person in her world at that moment. She is a shining star and she shines from the inside out. She has a contagious love that demonstrates compassion, kindness and grace overflowing from her deep abiding faith in Jesus Christ. But what I love the most about her is she is a commitment person!
Have you ever experienced a friendship with someone who is truly committed to you? A person who wants to see you strive for your goals and helps you achieve them and then celebrates with you? Have you ever been that kind of friend for someone else? What characteristics do you cherish in a deep abiding friendship? As you think about the people who have come into your life, which friends have been the “stick with you through thick and thin” kind of friends?…

Pam (Metz) Larsen and Young Living Essential Oils-PP Interview part 2
The best way to create a vision for developing a business, is to let your passion drive you. When you love a product and are thrilled with how it is changing your life for the positive, the opportunities to share your passion abound. We asked Pam a few more questions about how her business with Young Living Essential Oils has developed…..
How do you involve others in this journey and what have been your challenges-expected and unexpected?
“I’ve always been a more private person, so opening up to share is sometimes difficult for me. I have to sometimes remind myself that I share my stories because I think these oils are amazing and want everyone I know to experience them. I’ve also learned that not everyone is as open to taking a natural approach as I have become.”
What have been your blessings-expected and unexpected?
“Definitely the impact these oils have made on my family. I love being able to just grab my box of oils when we have something wrong. And the friendships I have built.”
How do you teach others about your product?
“I share my testimonies, and I have several resource books, Facebook groups and websites I share with others.”
Here is one of many of the awesome flyers that Pam puts together for her business builders and her customers.

Passion Perspective Interview Pam (Metz) Larsen and Essential Oils
In 2014 Pam made the decision to jump on board with an essential oils company called Young Living Essential Oils. In Pam’s interview for this Passion Perspective week we asked her a series of questions….
What sets Young Living oils apart from other essential oils? I absolutely love this company! I definitely made the right decision. They have been in business longer than any other essential oil company and have just celebrated their 20th year! They are the only essential oil Company that owns their own farms and distills all their own oils. They have their Seed to Seal Process which means they stand by their quality from the beginning to the end. They are there from when the seeds are put in the ground, to the harvesting, distilling and then bottling. What other company has a CEO that goes out and works on the farms, and is physically helping with every aspect of their Seed to Seal guarantee? Pretty awesome!

Passion Perspective-Getting to Know Pam (Metz) Larsen
Rachel has been meeting the coolest people in her community that have fascinating interests and passions…..
One of her new friends, Pam (Metz) Larsen, she met through FIT4MOM, a stroller based workout group. A few months after their friendship began, Rachel and Pam were surprised by their realization that they had gone to high school together. Rachel started to get to know Pam better and she found out that she uses Essential Oils-one of our new passions. Our interest in essential oils has been growing and we have all been learning about essential oils. We are so excited to feature Pam on our Passion Perspective Week so that we could share her wealth of knowledge about Young Living Essential Oils with you.
Here is a short bio of Pam:
“I was born on the east coast and moved a few times with my family. We eventually made our way down to Southern California where I now call home. I met my husband in college, 12 years later and we have two beautiful boys. I worked in the veterinary field for about 7 years after college, and then became a licensed cosmetologist, however I feel like my life became complete when I became a mom. I found my purpose.”

Re-invent the Roti
Extending our commitment for RENEWAL to creativity in the kitchen can result in delicious healthy meals for your family. My husband and I have a new passion for Indian food so I have been experimenting with some recipes. Last year I hit a home run (in my husband’s opinion) when I created a Bombay Bowl , so I had a bit of confidence that he would be up for trying another Indian surprise. Last week we enjoyed an Indian style wrap called a Roti. Roti is the flat bread made form stoneground whole wheat flour. In contrast to Naan bread, Roti is unleavened and therefore is perfect for a wrap style Indian meal. If you do not have the interest or time to make your own Roti flat bread, you can use Trader Joe’s whole wheat tortillas for a perfect Roti wrap. I had read about an eggplant curry from East India called Vindaloo. This curry is a popular dish from the region of Goa and is also found in the cuisine of Mumbai. Knowing that eggplant is not my husband’s favorite vegetable, I added equal amounts of roasted zucchini and roasted eggplant and the results was perfection. I also made a potato, carrot, pea and chicken filling as well.
Ingredients for Eggplant Zucchini Vindaloo Curry Roti Filling
2 teaspoons olive oil
1 yellow onion sliced thin
4 Indian eggplants or 1 medium regular eggplant cubed (1 1/2 cups needed)
2 zucchini cubed
3 cloves garlic smashed
2 teaspoons grated fresh ginger
2 teaspoon Garam Masala spice
2 teaspoons curry powder
2 plum tomatoes chopped
1/4 cup water…
Family-Supports One Another
We have been blessed with a family that supports one another. In triumphs and through trials, in new life and in death, in celebrations and in sorrow…our family sticks together. Last year, around this time we had two very important people pass away. We pulled together, we got through it and we grew in grace and wisdom. We experienced forgiveness and healing and we have moved on. This October, we celebrated a new birth, Mikah Ada. She is our 7th grand child and her arrival was just as exciting as our first grand baby. She is a precious addition to our family and although she is only 3 months old, I can’t imagine life without her. I often feel overwhelmed with gratitude for the pleasure of hearing the little voices of my grandchildren and I thank God daily for my family!!!

Family can also be a collection of friends that become as close as family through shared experiences over time. When we lived overseas from 1983-1985 the friends that we met in our community and at our awesome church became family. Since most of us were living very far from our real families, we spent every holiday together creating new traditions and sharing old ones. We still hold those friends close in our hearts even though we do not see them very often. We stay connected through phone calls, emails, social media and the infamous Christmas letters that we send every year.
Last night we had the privilege of attending a special anniversary celebration for dear friends. It was a reunion of sorts because so many of the guests had a rich past full of memories together. I was reminded of all that we had shared as we raised our kids together, served in church together and built lasting friendships …
