The “I’m Never Hungry For Dinner” Kind of Salsa

Chips and salsa… weakness. A good salsa is the perfect way to start a meal. But some of the meals just want to end with chips and salsa, because I just can’t stop eating them. Chips just become a vehicle at that point to get more of the amazing salsa. So chip after chip, it seems I can never get enough.  MMMM, I am starting to salivate just thinking about it. Not get hungry. I don’t think I have to be hungry necessarily to indulge myself in chips and salsa. This creates a problem. But, that doesn’t mean I am going to stop! So, here’s a salsa recipe to try. (Adapted from Pioneer Woman at http://thepioneerwoman.com)

1 can (28 oz) whole tomatoes with juice

2 cans Rotel tomatoes (diced tomatoes and green chilis)

1/2 cup chopped onion

2 cloves minced garlic

1 jalapeño pepper, quartered and sliced thin

1/4 tsp sugar

1/4 tsp salt

3/4 teaspoon cumin

1/4 tsp chili powder

1/4 cup fresh cilantro

1 lime juiced

Salsa Recipe: Throw all ingredients into a blender or food processor. Pulse or blend until you get the consistency of the salsa you like best. Refrigerate one hour then serve. and ENJOY!!!! I dare you to try to stop eating chips and salsa.

Added bonuses: Make your own chips from flour tortillas. Put some oil in a skillet, cut your tortillas into strips or triangles and fry them up. Add salt on top of the chips. Bake corn tortillas for a healthier option. Brush with oil or Spray with olive oil misto sprayer. Add salt or seasonings. Bake for 7 minutes, rotate baking sheets or flip chips, then bake 7 more minutes at 400 degrees or until golden and crispy. Or, eat salsa with cut up veggies, such as carrots (one of our family favorites to dip into salsa), bell peppers, cucumbers, cauliflower or any of your favorite veggies, to try a much healthier route.
