Cranberry Bread-A Christmas Favorite

When the holiday parties begin and you need a sweet and healthy treat to bring to any event or to give as a hostess gift, this Cranberry Bread recipe (page 153 in the Baby Bear Stew Cookbook) is a wonderful recipe to try. There is extra protein added with the cottage cheese and the cranberries, orange rind and lemon rind provide antioxidants and fiber.

Ingredients

½ cup butter (I used ¼ cup butter and ¼ cup coconut oil)
¾ cup brown sugar
½ cup sugar
2 eggs
1 cup cottage cheese
2 Tablespoons grated orange rind
2 teaspoons lemon rind
¼ cup orange juice
3 cups flour (I used ½ whole wheat flour)
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cup cranberries cut up
1 cup golden raisins chopped
½ cup chopped walnuts

Cream butter and sugar. Add eggs, cottage cheese, orange rind, lemon rind and orange juice. Mix well. Sift dry ingredients and add to wet ingredients. Stir until blended but do not over mix. Fold in the cranberries, raisins and nuts.Spoon into greased bread pans or muffins tins and bake in a 325 degree oven for 1 hour (shorter time if using small bread pans or muffin tins). This bread is delicious and a lovely treat for the holidays.IMG_5612

    I don’t really have a favorite cookbook but http://www.howsweeteats.com is one of my favorite blogs I get recipes from! I just made her peppermint Pattie brownies, they are amazing.

    My favorite holiday recipe is definitely my grandmas fudge. I’ve tried to make it a few times and its never quite the same as when she makes it.
