Banana Peanut Butter Cookies

I buy bananas for my husband because I know they are so good for him.  I do not like bananas AT ALL.  So often times they go bad pretty quickly. So I am always looking for recipes to bake or use bananas that I have thrown into the freezer. This recipe has been quite the hit. Enjoy!


Ingredients

3 ripe bananas, mashed
1 tablespoon vanilla
¾ cup natural chunky peanut butter
2 tablespoons maple syrup

1 tablespoon honey

2 cups old fashioned oats
½ cup flour (white or whole wheat)

1 teaspoon cinnamon
1 teaspoon baking powder
¼ teaspoon salt
½ cup non-dairy chocolate chips

Directions

Preheat oven to 350 degrees

Mash bananas so they are mostly broken up. Mix bananas, vanilla, peanut butter honey and maple syrup into creamy consistency in a large bowl.

In another bowl, combine oats, flour, baking powder, cinnamon, and salt

Add the dry ingredients to the wet ingredients and stir until they are well combined -the batter should be slightly sticky

Mix in the chocolate chips

Scoop cookies into tablespoon-sized balls and place onto an ungreased baking sheet

Bake for 15-18 minutes
