Apricot Crumble

Fresh apricots make a scrumptious sweet and tangy base for a summer cobbler. We like ours with an oat crumble granola-like topping. Using coconut oil, coconut flour and coconut sugar in the topping keeps this dessert delicious but adds a healthy dimension. Mexican Quinoa Salad

Quinoa is a superfood grain that is high in fiber and high in protein. It cooks up like rice, has a consistency similar to couscous and a mild flavor. It is the perfect base for healthy salads or can be added to any green salad to increase the protein content. It can be used as the base for pilaf or other side dishes that call for rice or bulgur wheat.

A Mom’s Reflection…Transformations

A Work in Progress

       This beautiful reflection was written by Jess, two weeks before baby Calvin was born.

“It’s almost time for baby #4 to be here. We are so excited to meet him! But I struggle with the fact that everything isn’t and won’t be ready for him at home. I’m realizing that I humbly and graciously have to accept that I am and will always be a work in progress as a mom. Just like his tiny little nursery (which is a bassinet in our closet). I have to fight the thoughts that “this isn’t enough for him” and “what will people think”, etc… But I am reminded of the perfect Christ child that was born in a manger who didn’t need anything except his mother and father’s love and care. I pray that I can remember this each day as I care for my children and do my best to love them as Christ loves me.”…

Bekah’s Whole Wheat Tortillas

As I have mentioned before, it is not always easy to find the healthiest options of food in Grenada. One of these “hard to find healthy options” has been tortillas. They do have them in the store (which we were pleasantly surprised about in the beginning), however, they only have a white flour option. I love whole wheat tortillas, but I was willing to make a sacrifice for the first few months we were in Grenada. When we arrived back to the island after our quick Christmas break, a friend mentioned that she was planning to make her own tortillas. As soon as she started telling me how easy it was, I wondered why I had never considered that! I went right home and started scouring Pinterest for a good recipe! My husband would choose white tortillas over wheat 9 times out of 10 until I found this recipe to make my own whole wheat tortillas from Bran Appetit- Now, he says my tortillas are the best wheat tortillas he has ever had! 😀
