Vegetable Delight Lentil Soup

It’s cold out there! What better than a warm bowl of soup for dinner. I love soup, but I have a hard time with the cold and dark weather of the winter. So I try to make new recipes for wonderful healthy soups to cheer up my days. Then I get warmed up from the inside out. Here is a recipe I adapted for a healthy lentil soup.

Ingredients:   
2 cups lentils
1tbs olive oil
6 cloves garlic
1 onion
3 carrots
2 stalks of celery
2 cups diced turkey meat
1 can diced tomatoes
3 cans of chicken broth
2 cups of water
1 cup chopped spinach
3 bay leaves
1 tsp seasoned salt
1tsp oregano

Directions:
Soak lentils for 15 minutes in cold water.
Sautee olive oil, 6 cloves of garlic and onion.
Add the carrots and celery and continue to sautee for about 5 minutes.
Add the lentils and sautee for 3-5 minutes.
Add turkey and sautée for 3 more minutes.
Then into your soup pot add tomatoes, chicken broth, water, spinach, and sautéed vegetables.
Add bay leaves, salt, oregano.
Cover and cook on low for 45 minutes.
