Overnight Fresh Berry Jam with a Minty Kick

Have you ever wondered what you can do with the final cup or two of berries that you have in the refrigerator the night before your morning trip to your favorite Farmer’s Market? Well this recipe is worth a try. You can be as creative as you like and the results will not disappoint!!IMG_5700

Ingredients

1-2 cups fresh berries
1-2 Tablespoons whole Chia seeds
1-2 teaspoons honey or agave
4-5 fresh mint leaves IMG_5697

Wash and stem 1-2 cups strawberries, raspberries, blueberries or blackberries, in any combination that sounds good to you. I used strawberries and raspberries. IMG_5694
Blend the berries in a blender, vitamix or magic bullet. Pour blended berries into a 2 cup measuring cup. Use 1 Tablespoon Chia seeds per cup of berries. Stir into the berry mixture. IMG_5699Add 1 teaspoon honey or your choice of sweetener per cup of berries. Add the mint leaves. (I left mine whole so that I could remove the leaves in the morning so the mint kick would not be overwhelming.)IMG_5711 2 Pour berry mixture into a Ball jar or tupperware container with a lid and seal and refrigerate until morning. The Chia seed creates a gelatinous concoction very similar to a cooked jam but tastes fresher and more healthy because there is very little added sweetener.
Get ready for a delicious treat to compliment any baked item at breakfast. I ate my jam with plain greek yogurt on a homemade bran muffin.IMG_5702
