Kidney Bean Caramelized Onion Veggie Burgers

This recipe was served at a potluck in Grenada and the friend who made them was gracious enough to share his recipe. As much as I loved the mini burgers he made for us that night, I altered the recipe and liked them even more. I served them on a Friday night with oven fries and my husband could not believe they were veggie burgers. Ingredients for Carmelized onions
2 large red or Maui sweet onions sliced very thin
2 Tablespoons olive oil
3 garlic cloves smashed
1 Tablespoons fresh rosemary chopped
2 Teaspoons Tumeric
1/2 teaspoon sea saltIMG_6023

Ingredients for burgers
2 cans (15 oz) kidney beans drained washed and mashed by hand
1/2 cup oat bran or quinoa flakes ( used a combo)
6 cloves garlic smashed
1/4 cup chopped cilantro
2 Tablespoons tahini
2 Tablespoons fresh lemon juice
1-2 Tablespoons chopped fresh rosemary
1 teaspoon sea salt
2 teaspoon ground pepper IMG_6024

For Carmelized Onions, pour oil into a large skillet over medium heat and heat until oil is hot. Place onions, garlic, rosemary, tumeric and salt into pan with hot oil and cook over LOW heat until onions are deeply browned and slightly gooey. Stir when necessary for about 40 minutes. If the onions seem dry, add a bit of water 1 tablespoon at a time. Use immediately or cover and refrigerate for up to 2 days.

For Burgers, place mashed kidney beans, onions, quinoa flakes, oat bran, garlic, cilantro, tahini, lemon juice, and rosemary in a large bowl. Mix until well combined. Shape into burgers (I made 9 out of my batch) and pat until 3/4 to 1 inch thick. Place on a cookie sheet covered with foil. Cover and refrigerate for 4 hours or overnight. When ready to bake, sprinkle patties with salt and pepper and place in a preheated oven 375 degrees and bake for 40-45 minutes.IMG_6025

Serve on healthy whole wheat buns or pita bread. We added fresh slices of tomato, cucumber, thinly sliced red onion, sprouts and homemade hummus to our warm whole wheat pita bread. I made homemade oven fries and a big green salad with balsamic dressing for a delicious Friday night Giants game picnic.
