High Protein Apple Muffins

WE LOVE muffins and are always looking for ways to add protein and fiber and cut down on the refined sugar. These muffins are delicious and fit the criteria we are looking for to give a boost to our healthy living lifestyle!!!
Ingredients
  • 2 cup Kodiak Cakes Protein Packed Flapjack and Waffle Mix
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ teaspoon salt
  • 3 cups apple, shredded
  • ½ cup maple syrup
  • 2 egg
  • 1 cup unsweetened applesauce
  • 2 teaspoons vanilla
  • To turn these into lactation muffins!
  • Add:
  • o 1 cup oats
  • o ¼ cup brewers yeast (Not nutritional yeast)
  • o ¼ cup flax meal (use chia seeds if flax bothers your tummy)
  • o increase to 1½ cups applesauce
  • o ¼-1/2 cup almond milk.
Instructions
  1. Preheat oven to 350 degrees.
  2. Stir dry ingredients together.
  3. Grate apples to make 3 cups and set aside.
  4. Mix eggs, maple syrup, applesauce and vanilla together in a separate bowl.
  5. Mix wet ingredients into dry and stir slowly until just moistened.
  6. Add grated apple and stir lightly to distribute evenly.
  7. Spoon into muffin tins that are greased or use paper liners. Bake for 15-18 minutes until toothpick comes out clean. No adjustments to baking times needs if using apple butter in your recipe or if you are adding the lactation muffin ingredients.
