Chocolate Chip Banana Bread

- 4 medium sized VERY RIPE bananas
- 2 eggs
- 1 ½ teaspoon vanilla
- ¼ cup coconut oil
- ¾ cup whole wheat flour
- ½ cup all purpose flour or TJ's white wheat flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 ½ teaspoons cinnamon
- ½ cup brown sugar firmly packed
- If you feel creative and want to increase the nutritional value of your bread, substitute ½ cup of cauliflower puree for ½ cup of the banana puree.
- Preheat the oven to 350 degrees.
- In a medium bowl, mix all the wet ingredients; banana puree, eggs, vanilla and oil.
- In another medium bowl, mix all the dry ingredients; flour, sugar, baking soda and baking powder, salt and cinnamon.
- Pour the wet ingredients into the dry ingredients and mix until combined but DO NOT OVERMIX! Fold in the chocolate chips.
- Pour into a well greased 9 x 5 inch loaf pan and bake in a preheated oven for 50 minutes.
- Test with a toothpick to make sure it is done in the middle.
- Remove from oven and let cool for about 30-45 minutes. Turn out onto a platter and cut slices.
- It is delicious warm.
- You can store the leftovers if there are any leftovers, wrapped in foil or saran and store in refrigerator for up to 1 week.
