BEST Summer Banana Bread

Have a bunch of bananas that ripened before you could finish the last few?.....Here is the perfect fun activity for kids during the summer.
Ingredients
  • BEST Summer Banana Bread
  • 1 ½ cups white whole wheat flour
  • ½ cup oat flour or ground oats
  • 1½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup packed brown sugar
  • ¼ cup maple syrup
  • 2 large egg
  • 1½ cups (from 4 medium bananas) ripe bananas, mashed
  • ⅓ cup plain yogurt or low-fat buttermilk
  • 3 tablespoons coconut oil
  • ½ cup chopped walnuts
Instructions
  1. Preheat oven to 350 degrees.
  2. Measure out the flour, oat flour, baking powder, baking soda, salt and cinnamon into a small bowl and mix.
  3. Mash the VERY ripe bananas in a medium bowl.
  4. Add the eggs, brown sugar, oil and maple syrup to the bananas and stir until blended.
  5. Slowly fold in the flour mixture and yogurt or buttermilk.
  6. Add walnuts if desired and stir gently.
  7. When blended, pour into a greased 9 x 5 inch bread pan.
  8. Bake of 1 hour. Test with a toothpick and remove from oven when toothpick comes out clean. Let cool, turn out of pan onto cooling rack and serve.
