- BEST Summer Banana Bread
- 1 ½ cups white whole wheat flour
- ½ cup oat flour or ground oats
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ cup packed brown sugar
- ¼ cup maple syrup
- 2 large egg
- 1½ cups (from 4 medium bananas) ripe bananas, mashed
- ⅓ cup plain yogurt or low-fat buttermilk
- 3 tablespoons coconut oil
- ½ cup chopped walnuts
- Preheat oven to 350 degrees.
- Measure out the flour, oat flour, baking powder, baking soda, salt and cinnamon into a small bowl and mix.
- Mash the VERY ripe bananas in a medium bowl.
- Add the eggs, brown sugar, oil and maple syrup to the bananas and stir until blended.
- Slowly fold in the flour mixture and yogurt or buttermilk.
- Add walnuts if desired and stir gently.
- When blended, pour into a greased 9 x 5 inch bread pan.
- Bake of 1 hour. Test with a toothpick and remove from oven when toothpick comes out clean. Let cool, turn out of pan onto cooling rack and serve.
