Cut open avocados, remove pit, and add insides to a large bowl. Mash up.
Add all other ingredients to the mashed avocados, except for the lemon, and mix together.
Cut the lemon in quarters and squeeze one quarters worth of juice into the bowl (Make sure no seeds fall into the guac). Mix and add more to taste but do not add more than an additional quarter lemon.
If you want your guacamole to have a bit of a kick, add some Tapatio sauce to taste. Be careful not to add too much at first as it can make the guac pretty spicy!
